4 tbsp. extra-virgin olive oil
1 lb. skirt or flank steak, sliced
1 tsp. ground cumin
2 peppers, cut into 2-in. pieces
1 tsp. chili powder
1 red onion, cut into wedges
4 garlic cloves, crushed
Juice of one lime
Your choice of toppings.
2 Zip-lock Bags
Before you leave:
Combine olive oil, cumin, chili powder, garlic, lime juice, salt and pepper. Put 1/2 of marinate in zip-lock bags
Slice steak and put in one of the zip-lock bag. Put in freeze until you leave
Cut up peppers and onions and put in the other zip-lock bag. Cherry Tomatoes maybe added. Put in frig to chill.
At Campsite: Thaw steak if needed.
Build campfire and place grate over fire.
On Skewers alternate meat and vegetables. Grill 5 - 8 minutes turning frequently to
