Sausage Skillet

1/2 Lb. link sausage
1 green or red pepper, sliced
1 large onion, peeled and sliced
3 - 4 potatoes, sliced
salt and pepper
1-2 T oil


1. Cut Sausage, peppers and potatoes into bite size pieces.

2. Put oil into skillet

3. Place all ingredients in a cast iron skillet.

4. set the skillet on the coals on the edge of the fire, or on a grate. OR medium heat on camp stove.

5. Stir frequently until the vegetables are soft and the sausage is cooked through.
