Spanish Rice

For 2 to 4 people:

1 large onion
Butter or oil
1 lb of hamburger steak
2 large cans of chopped tomatoes
Rice (enough for everybody)
Salt and pepper

This can be cooked in a Cast Iron Pot either on a Tri-Pod or on grate over campfire. You will have to adjust distance from fire.

Place pot over fire, add butter or oil. Once heated add chopped onion.

When onion start to become tender add the meat cook, stir to keep from sticking. More oil may need to be added. While meat is still a little pink add tomatoes and 1 can of water and bring to boil.

Add rice and seasoning, simmer until cooked stirring often to prevent sticking. (you may have to raise pot away from fire to simmer.
