Sausage & Beans

Serves 4:

1 medium sized onion, thinly sliced
1 medium sized green pepper, cut into 1/2 inch squares
1 or 2 Tbls. vegetable oil
1 can baked pork and beans
1 can butter beans, drained
1 small can sliced mushrooms, drained
5 oz. ready-to-eat smoked sausage
1/2 C Ketchup
1/4 C mustard
2/3 C maple syrup
1 Tps oregano
5 whole cloves
2 small bay leaves

Heat the oil in a large cast iron kettle over a low fire and gently sauté the onion and pepper. Add beans and mushrooms and stir well. Cut the sausage into bite sized pieces and add to the beans, together with the ketchup, mustard, maple syrup, oregano, cloves and bay leaves. Cook until
