Pre-staging the items on your checklist will help you in determining what remove or add to you list.
One concern will be to keep all of your items dry, various sizes of Zip Lock bags will be a necessary item. Large storage Zip Lock bags are now large enough to put your clothes etc. In addition, the use of a food sealer machine would come in handy for one-time use items. Items can be purchased that are specifically for canoeing or kayaking which come in waterproof case/bags or are quick drying.

Other list that may be useful are Clothing List, and Packing List. These are list that will be ever changing depending on where you are going, how long you will be gone and what time of year. To easily create these list, create a spread sheet for each of them and edit them when planning each trip.
You may be going on vacation, but the chances are you are going to be in the the middle of nature so be prepared.
